Cortina’s chefs bring a taste of Italy to Tokyo 2020

Even with all the travel limitations in place, Cortina, proud host city of the 2026 Winter Olympics along with Milan, will still be meaningfully represented in Tokyo, thanks to two of its most renowned chefs.

Graziano Prest is the heart and soul of Michelin-starred Ristorante Tivoli, located just a few steps from the legendary slopes of the Tofane. His superb recipes are based on ingredients strongly linked to the territory where they are produced, making a meal a veritable trip through taste. Ristorante al Camin – one Michelin plate – is the realm of Chef Fabio Pompanin. The warm and modern Alpine furniture perfectly matches the great dishes stemming from Cortina’s tradition with the addition of an extra bit of creativity.

Graziano and Fabio are both part of the Cortina Chef Team, a group of local chefs who took care of the Tofana Lounge at the 2021 World Ski Championships in Cortina and regularly work together for some gourmet events.

For the two chefs, this is not the first experience in the world of major sporting events. After working in South Korea in 2012 at Kangwonland’s FISI Congress, they were the chefs of Casa Italia during the World Ski Championships last February in Cortina d’Ampezzo. Being appointed as the chefs of Casa Italia in Tokyo, along with Stefano Camata and Andrea Simioni, is a testament to their outstanding skills and excellent work.

Fabio and Graziano will symbolically link Tokyo with Cortina as well as food with sports, under the common thread of striving for excellence. Their menus will highlight Italian cuisine, and the Inauguration dinner will be a tribute to the host cities of the 2026 Olympic Games with dishes inspired by Milan’s and Cortina’s culinary traditions.

Their presence at Casa Italia during the Tokyo Olympics has a high symbolic value: excellent cuisine is part of Cortina’s DNA, just like winter sports and the Olympics.
